Most Italian meals seem to be incomplete without the expanding of cheese. Paring pastas and vegetables with melted cheese adds a zing to the recipe.

The next time when you are having a party try these astounding cheesy recipes: 

Taleggio Dip

1 cup - taleggio cheese

½ cup - parmesan cheese

1½ cup - cream

1 No - oregano

Melt the cheese and cream and embellishment with oregano. You can replace taleggio with other rind cheese such as oka, epoisses, raclette.  

Remember: They are a type of semi soft cheese whose rinds mostly pungent, at times sticky or gritty, and range from reddish to orange to brown. The surface-ripened by washing them in beer, wine, or any other liquid while the maturation process. Thus the washing facilitates increase of inescapable useful bacteria, which help to ripen and flavour the cheese. Flavour of such cheese can be very sharp so do taste before using. 

Castelmagno pasta

1 cup - penne pasta

½ cup - castlemagno cheese

¼ cup - parmesan cheese

1 cup - cream

Pepper to taste

Garnish with fresh herbs if desired

Melt the cheese and cream and add it to the pasta. Sprinkle black pepper and serve.

About Castelmagno: This is a type of a semi fat cheese having a savoury flavour and with age it begins to turn salty. But this cheese pairs well with pastas, grilled vegetables an rice.

Gorgonzola Salad

Gorgonzola is an aged, distinctively sharp blue-veined cheese that pairs plainly with fruits and walnuts. When younger this cheese has a sweeter flavour and is soft textured but with age it turns spicier and crumbles. 

Try this fruit and nut gorgonzola salad

1 cup - gorgonzola cheese

1 cup - lettuce

¼ cup - walnuts

1 No - peach

3 tbsp - cream

¼ tsp - butter

¼ tsp - sugar

Sauté the peach in butter and sugar for 2 mins.

Slice half the cheese and mix it with lettuce.

Melt the rest and mix with cream.

Add this mix to the salad and sprinkle pepper.
